Achillée Estate
For about twenty years, the Achillée vineyard has been cultivated using organic farming methods, and since 2003, it has embraced biodynamic principles. In 2016, the estate inaugurated a passive bioclimatic winery, entirely built from wood and straw, where wines are vinified independently. This remarkable building, made up of 5,000 self-supporting straw bales, is now the largest construction of its kind in Europe. Located in the heart of the Alsace wine route, it embodies the estate's commitment to environmentally respectful practices and the quality of the wines produced.
The vineyard holds a central place in the estate's care, aiming to meet the needs of both the wine and nature. The working methods implemented limit yields and prioritize the quality of the grapes. Fermentations are spontaneous, thanks to indigenous yeasts from house-made starters prepared from the estate's grapes. Vinifications are carried out with minimal additives, and sulfiting is only applied when necessary, in homeopathic doses, solely at bottling.
The Achillée team warmly welcomes you to the estate's tasting room, where passion for wine flourishes. Come discover the site during a cellar tour followed by a tasting, or simply enjoy a relaxing moment in the spaces arranged with sofas, around a glass of wine accompanied by a platter of cheeses and charcuterie.
