Restaurant L’Aigle
Nestled in the heart of Kochersberg, in the charming village of Pfulgriesheim, the restaurant L’Aigle embodies an Alsatian family history dating back to 1881. This iconic establishment, passed down through generations of the Roth family, passionately preserves a unique culinary heritage.
From Michel and Eva to André, Marthe, then their daughter Lydia and her son Antoine, each member has contributed to maintaining and enriching this tradition while honoring the ancestors who shaped the identity of the place.
The tarte flambée, a symbol of Alsatian gastronomy, is carefully prepared here: a thin, crispy dough topped with a mixture of fresh cream and fromage blanc, sliced onions, and bacon bits, all sourced from local producers.
